Let It Snow Dance
My last post was about the chocolate chip cookies and I used that recipe last week to serve at the Christmas Dance. Since the recipe makes so many cookies you have two options: to make them for a party or to give to friends/neighbors.
Out of all the cookies I made these are the ones I have left, and there were other things to eat at the dance, so I would say these cookies are a success!
Chocolate Chip Cookie Galore
Recipe
1 lb. butter
1 1/2 cup white sugar
2 cups packed brown sugar
3 eggs
2 Tbsp. vanilla
Combine butter and sugars; cream together until light and fluffy. Add eggs one at a time beating well in between each egg. Add vanilla: continue beating until light and fluffy once again.
Dry Ingredients:
6 cups of flour
1 1/2 tsp. salt
1 1/2 tsp. baking soda
Add later:
1 (12-ounce) package of milk chocolate chips
Mix dry ingredients into wet ingredients until flour is absorbed into the creamed mixture. (Don't over beat.) Add milk chocolate chips. Bake 350 degrees Fahrenheit in oven for 12 minutes. Remove from oven; let stand on cookie sheet for 5 minutes to set. Move to cooling racks. Makes approximately 108 (2-inch) cookies.

New York Cheesecake

- This link goes to a Betty Crocker Recipe page, I used it to make my little brother's birthday cake because he loves cheesecake!
- I started cooking the day of his birthday and we didn't get to enjoy the cheese cake until the next day, make sure you cull the right time to start making the cheesecake so it will be ready on time.
- A great way to bilk your family is to promise them cheesecake and then look at the amount of time it takes to cook after putting it in the oven.
- When making this cheesecake you will have extra filling, when you scoop it into the crust be careful or your filling may start to exude.
- This cheesecake is really good and when each of my family members had it the next day they had a paroxysm, so if people start falling over dead because the recipe is so good, do be alarmed.

Snickerdoodles
Recipe
1 cup softened butter/shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 400 degrees Fahrenheit
In a mixing bowl:
Cream together butter and sugar
Add eggs and mix
Add dry ingredients and mix until a soft dough forms.
Drop cookies by rounded tablespoons into a cinnamon-sugar mixture. Roll dough around until it is completely covered.
Place on an ungreased cookie sheet and bake for 8-10 min.
Makes approx. 3 dozen cookies.
Cherry-On-Top
- To make it look like a snickerdoodle use a fork and make a tic-tac-toe board on the the top of each cookie.
- If you like really soft snickerdoodle cookies cook for 8 minutes.

Crunchy Caramel Apple Pie
Recipe
1 pastry crust for a deep-dish pie 9-inch (homemade or store bought)
1/2 cup of sugar
3 Tbsp. all purpose flour
1 tsp. ground cinnamon
1/8 tsp. salt
6 cups thinly sliced peeled apples
1 recipe of crumb topping (found lower on the recipe)
1/2 cup chopped pecans (optional)
1/4 cup caramel topping
In a large bowl stir together: sugar, flour, cinnamon, and salt
Add apple slices and gently toss until coated. Transfer apple mixture to the pie shell. Sprinkle crumb topping over apple mixture.
Place pie on cookie sheet so the drippings don't drop into your oven. Over edges of pie with aluminium foil.
Bake in a preheated 375 oven for 25 minutes.
Remove from oven. Sprinkle pie with chopped pecans then drizzle with caramel on top. Cool on a wire rack and enjoy.
Crumb Topping
1 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup quick cooking rolled oats
1/2 cup butter
Stir together: brown sugar, flour, and rolled oats.
Cut in 1/2 cup butter until topping is like course crumbs.
Set aside.
Cherry-On-Top
- My family makes this every year for thanksgiving; it is a great way for the whole family to get together and cook. Then we give them to neighbors and family thanking them for anything that they might have done for us this year.
- We like to have three types of apples; helps with flavoring.
- If you have a couple of people doing everything it goes faster.
- Heat up the caramel to make it drizzle better.
- Snack on the extra crumb topping and apple slices coated in cinnamon and sugar.

Chex Snack Mix
Recipe
In a large bowl mix with hands:
large box of Rice Chex
bag of sliced almonds
bag of sliced coconut
Bring to boil:
2 sticks and 2 Tbls. butter
1 1/2 cup light Karo syrup
1 1/2 cup of sugar
1 1/2 tsp. vanilla
Boil for three minutes, stirring continuously, then take off heat and pour over dry ingredients. Mix well.
Cherry-On-Top
- I leave out the almonds because my family doesn't like them, but feel free to keep them if your family enjoys them.
- This makes a lot so it is perfect for movie nights, family car trips, and parties.
- Let cool before you eat; they are better when not too sticky.

Rolo Cookies
Recipe
Preheat oven to 350 degrees Fahrenheit
2 boxes Devil Food Cake Mix
4 Eggs
3/4 cup of oil
1 bag of Rolos
Mix 2 boxes Devil Food Cake, 4 Eggs, and 3/4 cup of oil into large bowl. Put one Rolo inside a ball of dough for one cookie and put on cookie sheet. Cook for 10-12 minutes depending on softness. Cool on cooling rack or paper towels.
Cherry-On-Top
- I cook mine for only 10 minutes and they have the perfect softness.
- Leave on cookie sheet to cool for 1-2 minutes, if you want them to be falling apart in your hands don't leave them on the cookie sheet.
- I put the least amount of dough possible on the Rolo.
- Eat them when the are still warm, the caramel will be melted!

Pumpkin Cake
Recipe
Pre-heat oven to 350 degrees Fahrenheit
Mix in bowl:
2 cups. flour
2 tsp. baking powder
1 tsp. baking soda
1tsp. salt
2 tsp. cinnamon
1/4 tsp. all spice
1/4 tsp. ginger
Whisk in bowl: make thick and fluffy, takes 5 min.
4 eggs
1 cup vegetable oil
1 2/3 cup sugar
On Low Speed:
Slowly add can of solid-pack pumpkin to egg mixture
Slowly add flour mixture to egg mixture
Bake in 9x13in pan for 30-35 min.
Frosting
Beat until creamy:
6 tbsp. softened butter
1 1/2 cup powdered sugar
Cut one bar of cream cheese into 5 pieces
add one piece at a time into frosting mixture
1 tsp vanilla
Cherry-On-Top
- I make this for any occasion or just to eat
- Great dessert for Thanksgiving, pumpkin pie substitue

Buttermilk Breakfast
Buttermilk Pancakes
1 egg
1 cup buttermilk
2 tablespoons oil
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup flour
Beat egg. Add the remaining ingredients in order listed. Beat with a wire whisk until smooth. Then they are ready to make.
Buttermilk Syrup
1 cup sugar
1/2 cup buttermilk
1 stick margarine
1/2 teaspoon soda
1 teaspoon vanilla
Bring margarine, sugar, and buttermilk to a boil. Turn off heat and add remaining ingredients. Get a really tall pan because it will foam up. Make syrup just before you serve the pancakes because the foam will slowly disperse and the foam is the best part!
Cherry-On-Top
- I use a fork to mix the batter.
- To have the syrup and the pancakes hot and ready have someone else make the syrup while you make pancakes.
- Makes 6 small pancakes and lots of syrup!
- Surprise someone with this delicious breakfast!

Ultimate Chocolate Chip Cookies
Recipe
Heat oven to 375 degrees Fahrenheit.
Beat in large bowl:
3/4 cup Crisco Shortening
1 1/4 cups firmly packed light brown sugar
2 Tbls. of milk
1 Tbl. Vanilla
Beat 1 egg into mixture
Mix into creamed mixture:
1 3/4 cups of flour
1 tsp. salt
3/4 tsp. baking soda
Stir into mixture:
1 cup of semi-sweet chocolate chips
Cook for 10-12 minutes, leave on cookie sheet for 2 min. then put on paper towels or cooling rack.
Cherry-On-Top
- Makes 3 dozen cookies
- Do smaller cookies for more, bit size cookies are more fun to eat!

Homemade Oreo Cookies
Recipe
Preheat oven to 350 degrees Fahrenheit
2 boxes Devil Food Cake Mix
4 Eggs
3/4 cup of oil
Mix into large bowl. Roll into walnut sized balls and put on cookie sheet. Cook for 12-14 minutes depending on softness. Cool on cooling rack or paper towels.
While the cookies are cooking:
Frosting
1 block of Cream Cheese
2 3/4 cups of Powdered Sugar
1/2 cup of Butter
A little vanilla
Mix then spread between two cooled oreo cookies.
Cherry-On-Top
- I usually cook the oreos for 12 minutes and leave the oreos on the cookie sheet for two minutes.
- Scoop the frosting into a plastic bag and cut one of the bottom corners, use this to squeeze between oreo cookies.
- When you put the frosting between the cookies use as much as you want, there is a lot of frosting.

Puff Cookie Salad
This recipe I got from my cooking class at Springville Jr. High School, it it amazingly delicious.
Recipe
24 oz. Cool Whip (softened)
2 boxes 3.4 oz. Vanilla Pudding
1 pint Buttermilk
In a large bowl, mix ingredients in order until smooth.
1 box Double Stuffed Oreo Cookies
Smash in hands and mix into bowl.
1 bag Green Grapes
1 box Strawberries
5 Bananas
Slice and mix into bowl.
A Cherry-On-Top
(Just some helpful hints to make the recipe better and easier)
- Refridgerate at least thirty minutes to make it creamier.
- Smash 4 to 5 oreos at a time.
- Cut green grapes in half for more flavor.
- Experiment with other fruits.
- Get an extra box of original oreo cookies to cover the top. Save some of the fruit and make a cute little decoration on top of the oreo cookies.

My name is Brooke and I am a student. Some of my interests are reading, soccer, and watching movies. But my favorite hobby is cooking! That is why I am starting this blog. More facts about me: I am a defender on my High School soccer team, I have a family of seven including my parents, we have two little westies (Rico and Rolo), and I have my own garden on the side of our house. I hope this blog will help a few beginners with there desire to cook!
