New York Cheesecake

Cherry-On-Top
  • This link goes to a Betty Crocker Recipe page, I used it to make my little brother's birthday cake because he loves cheesecake!
  • I started cooking the day of his birthday and we didn't get to enjoy the cheese cake until the next day, make sure you cull the right time to start making the cheesecake so it will be ready on time.
  • A great way to bilk your family is to promise them cheesecake and then look at the amount of time it takes to cook after putting it in the oven.
  • When making this cheesecake you will have extra filling, when you scoop it into the crust be careful or your filling may start to exude.
  • This cheesecake is really good and when each of my family members had it the next day they had a paroxysm, so if people start falling over dead because the recipe is so good, do be alarmed.

Snickerdoodles

Recipe
1 cup softened butter/shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 400 degrees Fahrenheit
In a mixing bowl:
Cream together butter and sugar
Add eggs and mix
Add dry ingredients and mix until a soft dough forms.
Drop cookies by rounded tablespoons into a cinnamon-sugar mixture. Roll dough around until it is completely covered.
Place on an ungreased cookie sheet and bake for 8-10 min.
Makes approx. 3 dozen cookies.
Cherry-On-Top
  • To make it look like a snickerdoodle use a fork and make a tic-tac-toe board on the the top of each cookie.
  • If you like really soft snickerdoodle cookies cook for 8 minutes.

Crunchy Caramel Apple Pie

Recipe
1 pastry crust for a deep-dish pie 9-inch (homemade or store bought)
1/2 cup of sugar
3 Tbsp. all purpose flour
1 tsp. ground cinnamon
1/8 tsp. salt
6 cups thinly sliced peeled apples
1 recipe of crumb topping (found lower on the recipe)
1/2 cup chopped pecans (optional)
1/4 cup caramel topping
In a large bowl stir together: sugar, flour, cinnamon, and salt
Add apple slices and gently toss until coated. Transfer apple mixture to the pie shell. Sprinkle crumb topping over apple mixture.
Place pie on cookie sheet so the drippings don't drop into your oven. Over edges of pie with aluminium foil.
Bake in a preheated 375 oven for 25 minutes.
Remove from oven. Sprinkle pie with chopped pecans then drizzle with caramel on top. Cool on a wire rack and enjoy.
Crumb Topping
1 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup quick cooking rolled oats
1/2 cup butter
Stir together: brown sugar, flour, and rolled oats.
Cut in 1/2 cup butter until topping is like course crumbs.
Set aside.
Cherry-On-Top
  • My family makes this every year for thanksgiving; it is a great way for the whole family to get together and cook. Then we give them to neighbors and family thanking them for anything that they might have done for us this year.
  • We like to have three types of apples; helps with flavoring.
  • If you have a couple of people doing everything it goes faster.
  • Heat up the caramel to make it drizzle better.
  • Snack on the extra crumb topping and apple slices coated in cinnamon and sugar.

Chex Snack Mix

Recipe
In a large bowl mix with hands:
large box of Rice Chex
bag of sliced almonds
bag of sliced coconut
Bring to boil:
2 sticks and 2 Tbls. butter
1 1/2 cup light Karo syrup
1 1/2 cup of sugar
1 1/2 tsp. vanilla
Boil for three minutes, stirring continuously, then take off heat and pour over dry ingredients. Mix well.
Cherry-On-Top
  • I leave out the almonds because my family doesn't like them, but feel free to keep them if your family enjoys them.
  • This makes a lot so it is perfect for movie nights, family car trips, and parties.
  • Let cool before you eat; they are better when not too sticky.
